This finely crafted rice measure with corners reinforced with iron was made over a century ago in the Shanxi region of South China, where the grain thrives because the climate is warm and wet. Over thousands of years Chinese farmers developed many varieties of rice: Some were bred to be drought-resistant, while others were bred for early ripening or brewing rice wine.
